an acidic element that breaks down the protein in beef. Makes it very tender. Try buttermilk on one and ranch on the other and see which you like the best. Never hurts to experiment. During the warm weather my wife and I cook the sirloins two to three times a week. My kids and their families insist I cook the sirloins when they come to visit. 18 people. Buttermilk has been the best tenderizer I have ever used and I grill alot. If you are close to a HY-VEE, try their 8 oz., bacon wrapped sirloin. Great price and if grilled properly just as good as a fillet at 1/3 the price.
