time. They are fantastic!!! Soak in buttermilk for at least four hours. Yes buttermilk. Skim buttermilk off before putting on grill. Cook on one side for seven minutes then flip and cook for four minutes. They are perfect and taste like a fillet. I bought a charcoal grill just for cookinng these. Usually use propane for the convenience, but charcoal is so much better with the sirloin. Good luck.
