The medical professionals require fresh, living tissue. The abortionists came up with the partial birth abortions to help get the necessary parts quickly on dry ice for them. They would deliver the baby feet first and then stop at the point where the baby's head wasn't completely out. They would then stab their forceps into the baby's skull and spread them apart to widen the opening so that they could suction the baby's brains out to collapse the skull and remove the dead baby.
They had the necessary equipment there to put the baby on dry ice to get them to the purchasers as quickly as possible with minimal deterioration of the parts.
That was outlawed and courts overturned each other until the Supreme Court finally upheld laws banning partial birth abortion.
After that they came up with "therapeutic abortions" where the mothers were induced and they would deliver live babies and not give them any food, water, or other hydration and just wait for them to die. Many of these babies were past the age of viability. Nurses have testified that children who were born at the same age or younger and were wanted were put in incubators or given other medical treatment to help them survive, while the unwanted ones were just left to languish and die.
Some children apparently have been put into freezers alive until the medical teams can get to them to harvest their body parts:
