Think there are 2 non-injury related examples

Brad Sutton in 1985-86 redshirted his freshman year. He then played 4 seasons at MU, but never avged more than 2.3 ppg or 1.4 rebounds.
Mark Anderson in 1972-73 redshirted his freshman year. He played 3 years at MU (when you only had 3 years of eligibility), avging 5.7 ppg and 2.9 rebounds his junior year before not getting much playing time as a senior and only avging 1.6 ppg and 1.2 rebounds.
Some guys I can recall who have sat out a redshirt season due to injury are:
Laurence Bowers: 2011-12
Kadeem Green: 2010-11
Jeffrey Ferguson: 2003-04
Josh Kroenke - 2000-01
Monte Hardge: 1996-97
Kelly Thames: 1994-95
Chris Heller: 1991-92
Marc Dressler: 1980-81
Barry Laurie: 1979-80
Lex Drum: 1979-80
Jeff Curry: 1976-77
That may not be an all inclusive list, not sure where to look that up to confirm.
