If done correctly a random sample of a few hundred people can correctly reflect the views of hundreds of thousands of people.

Polling can be easily manipulated by the questions asked and of who they are asked. I am not claiming that all polls are valid IMO very few are.

Samples can be a part of bad polling. Sample size itself is not a problem.

Your depth of knowledge on this subject sould be measured with a micrometer.
