...breweries and brewpubs. Why would someone with a following in a local area invite travel elsewhere for the latest trend? If you are a brewery in St Louis, why wouldn't you try to make a good hazy IPA to stop all your clientele from going to Narrow Gauge, where you can get world-class versions? Similarly, in KC, if you love a good stout, often barrel-aged, or a hazy sour, or a hazy IPA, especially a double hopped IPA when offered, you would go regularly to Diametric in Lee's Summit, unless you have a creditable version without going out of your way. And, the competition creates widely available excellence.
The good thing about the RIS varieties is that there is a base beer. Diametric, for example, recently had about 5 versions. Happily, while all of the flavored versions sold out, I was enjoying the straight barrel aged version several weeks beyond, until getting the final pour last night. Just because the foo-foo versions are offered doesn't mean you have to drink them.
