open a new location and try to be all modern and swanky or stop serving on wax paper or whatever. Then it wouldn't be Booches.
I will split the difference and say that for a chain like Fiorella's that, though historic, tries to be upscale and adds new menu items, they need to keep competing and updating at least somewhat. But places that have been unpretentious, low key hole in the wall spots like Gates or LC's that have so much tradition built up being exactly what they are should not change who or what they are or the way they do things. They are a link to the past and KC's bbq tradition. If people want something new and different, they can go to the new and different. But the old school with old ways and old recipes will always have its place.
