We had rolling blackouts before we ever had solar or wind energy. The grid itself does not always handle peak demand, especially if that demand is extremely high, and more than the grid was built for. A mixture of solar, wind and nuclear, with a modern grid and appropriate infrastructure, would be extremely reliable and would not have significant possiblility of blackouts. Main need for that is to modernize the grid itself.
