can’t I apply my skills elsewhere after leaving a company and my owner?

Why must I agree not to share what I have learned with other people and other owners of men.

Am I not the owner of the intellectual property in my own mind? Property that I have accumulated fairly legally but now must not share with other owners?

Anyone on this board have any opinions on property rights?
