with an experimental vaccine whose manufacturers have refused to provide unless they are given immunity from paying for any adverse consequences therefore would meet the definition of coercing methinks.

Businesses getting into shouting/shoving matches with customers who won't comply &/or leave would seem to fit the definition of the use of intimidation or force. Certainly calling in the police to intimidate or to forcibly remove them if that fails would be the use of force.
