In fact, what you described is pretty much the ONLY thing congress could impeach the President for... assuming it wasn't self defense (see, even your extreme example has its own problems. I wouldn't impeach Garfield had he seen his assassin's gun, and instead personally stabbed the assassin first. Would you impeach him for that self defense?)
The likelihood of the President ever committing a crime like that is probably very small.
Everything else is nonsense.
