If I feel a business is doing wrong (or if someone else does), I have no problem with someone calling out that business. If the business wishes to defend their practice and explain it, that is fine...and then the consumer will decide.
While I understand your point that a business would increase their prices in times of demand/supply crunches, I also think that is being unreasonable to customers who may not be able to afford such pricing.
Do businesses have an obligation to their communities and neighbors..of course not..but I do believe that a business that is perceived as positive within its community does likely do better in the long run, and I would certainly patron that business over a biz that took advantage of a market opportunity in the short run.
