I usually throw two in the electric smoker. I have a pellet tray I can light on one end and it will smoke for hours without having to add chips. It usually takes 12 to 14 hours so I set the alarm on the remote thermometer and fo to bed. Get up the next day, wrap them in foil, put them in a cooler and stuff the space with a pillow. Then pull them a few hours later at the tailgate.
