When I smoke one, we typically use some of the leftovers in sandwiches and/or burritos. The bone and drippings get used to cook either soup or beans.

I hang it in my drum barrel smoker over charcoal until approx. 130 degrees, then I put it in a foil pan, cover, and bring it up to 195 to 205, approx. 7 hours. I add a chunk of pecan and apple for flavor.

I make my own rub. I've been thinking about trying an injection to flavor the interior more.
