Many players have employment contracts and the NFL has a contract with its player's union.
Cutting productive players that are currently under contract would allow them to become free agents, which allows the player to receive another signing bonus, so some would benefit.
Of course the team that cuts a productive player would be giving up a valuable asset (a contract), but there is no legal reason why the player could not be cut.
