was on the kettle for 13 hours, including overnight while I slept. I added fuel once, in the morning at about 10 hours in.
Used a couple of fire bricks to keep coals on one side, flip the hinged grate to add fuel. There are other gadgets (Smokenator, Slow n Sear, etc.) that do the same thing for more money, but fire bricks will work just fine.
For ribs, I use the snake method.
EIther way, the kettle holds temperatures very well once dialed in.
My Weber kettle cooks pork butt, ribs, burgers, hot dogs, steaks, veggies, fruit, and pizza. Cornbread, baked potatoes, beans, fish, pork tenderloin, chickens, cake, cobbler, pie. Very versatile piece of equipment.
