Poe (Memphis, not LSU) is one.

Beau Allen is listed at 327 on the Eagles roster. And they don't run a 3-4 anymore. And he's not a starter.

BJ Raji is retired.

Shelton is listed at 335 (moving the goal posts a bit).

Goldman is listed at 320 on the Bears roster.

Knighton, as you note, is not on a roster.

The Giants (Harris) play a 4-3 defense.

So yeah, there are a few, and that kind of size may be ideal, but the majority are not that big.
