into. Over the years I enjoyed Cashew Chicken in Springfield. The Bamboo Inn and Leong's come to mind. However, the last three times I've ordered it I have been disappointed. One was at a Chinese restaurant in Moberly and the other two were in Columbia. The Columbia area Chinese restaurants cut the chicken into 1/2 inch cubes and smothered the tiny morsels in dough. The Columbia style is Cashew Dough and not Cashew Chicken. I have family in Columbia, but have little reason to travel to Springfield.
