Why does Mizzou switch & have guards guarding centers?

It happens every single game. Instead of fighting through the screen, Mizzou switches - the center goes to the basket, the ball is lobbed into him, and you've got a 6'3" guard trying to guard a 7'center 2 feet from the basket.
Gates has forgotten more about basketball than I know - I guess he must have his reasons.
