Absentee ballots in previous elections were almost always the last to be counted, and often times they were in such small amounts that they were unlikely to sway the election, so the counting of the ballots took days after election day.
Your understanding on this isn't correct. PA, WI and othe states tried to get their legislature to allow absentee ballots counted PRIOR to election day. Those republican legislatures refused. Why? Because they knew there was a chance that the election day vote totals would favor trump, but the absentee vote totals would favor biden, and they wanted to sow as much confusion as possible.
Ask yourself why they prohibited counting votes as they arrived.
