about halfway through the game you'll get to an NPC that let's you completely respec all of your skill points.

It's not unlimited, there's a resourced used to do it, but you find enough of the resource to probably respec half a dozen times if you need to

I initially went WAY too far into Dex points, which ended up being worthless other than for meeing minimum weapon requirements. Pulled all of those points out of dex and moved them over into strength and faith. Worked a lot better.
