Mesa Verde
Bryce
Canyon de Chelly
At least drive through Monument Valley

See if you have time or are in the area

Hovenweep (pretty close to Mesa Verde). Not dramatic but uncrowded and interesting
Capitol Reef - Nice but scenery isn't that dramatic compared to the other Utah parks
Any number of slot canyons in Southern Utah northern Arizona.
Dead Horse Point Utah (near Arches) and Canyonlands (also near Arches)

While in Zion, the hike to Angels Landing is pretty impressive. If you don't mind heights and exposure, it's well worth the exertion to get there. Start early. It gets busy.
