There is literally no way to prove that his death was "100%" caused by the stress of his arrest as you claim, nor is there a way to prove that the cops knew of his heart condition or drug levels which would be needed if you want to claim gross negligence which is needed for the manslaughter charge just as someone could claim that Floyd died due to excited delirium.

They also found half chewed pills in the police car with Floyd's DNA on them.

Again, the standard is reasonable doubt, something you don't seem to understand.
