If Trump is so awfully incompetent, surely debating him would be a simple thing, right?

A debate with Biden may in fact be difficult for Trump - not because Biden would challenge Trump in any way, but it could be difficult for Trump to defeat Biden without humiliating him. Which might be bad for Trump.
