Like others have said, Big Cedar is very nice.

Have stayed there several times. Overpriced across the board, but because Johnny Morris owns most of the Springfield/Branson metroplex, there's little choice. Don't expect the food quality to match the price. Utilize the shuttles...great service around what's becoming a bigger and bigger property.
If you like to shoot skeet/clays, try out his new Shooting Academy right down the road...as with most everything Morris does, it's just an awesome facility. If you fish and can get out for a half-day, Long Creek is the smallmouth capital of Table Rock Lake, and this time of year is phenomenal. Dogwood Canyon is also beautiful, and you can have a meal and walk/ride the grounds. The trout hatchery below the dam is also worth a visit.
For a really good burger and shake, leave Big Cedar and hit Oasis over in Blue Eye. Twin Island (gas station and market) makes great pizzas (yes, seriously). Danna's BBQ in West Branson is pretty good if you go that far, and Gettin' Basted is also worth checking out on the strip.
I say all this knowing that if you're there for a conference, you probably won't have time to do jack sh-t. But if you can sneak away...
