since all posts older than about 2 years are gone, so is this. I can't remember who, but someone used my "recipe" and won a chili competition with it.
I put "recipe" in quotes because it's really just a slight alteration to whatever recipe you normally use
Joeboo's chili "Recipe"
Start with the base of your favorite chili recipe
- However much meat it calls for, make sure it's a 1/3 bacon, 1/3 Italian sausage, 1/3 ground beef mix(or steak cubes if you want to get real fancy). If the recipe calls for 3 lbs of ground beef, use 1lb of each of those. The key here is to chop the bacon up into 1-inch pieces, and cook that before anything else in your chili pot. Once crispy, add ALL of your chopped vegetables (onions, peppers, etc) to sautee in the bacon grease. Dont dispose of ANY of the bacon grease from the pound of bacon you just cooked, those veggies will soak it up for extra flavor.
- However many cans of diced/crushed tomatoes your recipe calls for, substitute half of those with an equivalent amount of Ro-tel.
- Always add a beer for flavor. I generally prefer something like a stout or brown/amber ale, but even a wheat beer works. Don't use a lite beer, you're basically just adding water with that
You can easily control the heat purely with the Italian sausage and the Ro-tel. If you like your chili spicy, then go spicy Italian sausage and HOT Ro-tel. Dial both back to medium/mild if you don't want the chili to clear out your sinuses.
There you go, I guarantee it'll be the best chili you've ever had.
