The problem with his offense is it can't pivot to a good run game when that's really needed. The cold, wet, snowy game with bad footing called for a good running game, and Washington had it.
This is a similar problem our team faced in the Texas Bowl constantly being pinned back deep in it's own end. Those situations call for a really good and varied rushing attack and the air raid offense (see a common thread here) does not really have that option in the playbook.
So, Leach's air raid teams are going to do fairly well because he's a master practitioner of the air raid ... but when they come up against certain opponents and/or certain situations, there are just going to be problems.
Washington answered that challenge with a lot.of cutback runs - the rb knew when he was going to cut and the defense didn't, so that was a huge advantage in the wet, gloppy snow and rain. It worked fine and time again, if you watch the second half. Wazzu kept having to rely on short passing and it just didn't hold up (undertsandably) in those conditions.
