Do you say "fisherman" or "fisherperson"

That is one I actually can't wrap my mind around, though it was introduced to me by a fellow park ranger in 1980 or so.
I do "firefighter" instead of "fireman" and have for years.
I do "police officer" instead of "policeman" or (gasp) "patrolman" and have for years--even when the latter term was in my department's SOP manual as a job description.
Salesperson instead of salesman/saleswoman.
