You focus 160 years. For nearly all of that period we were almost entirely an agrarian nation, where nearly all people grew their own food. The demands upon the nation and society were vastly different after industrialization really gripped us. I guess you might yearn for those happy years prior to child labor laws too or any worker safety measures.
