401k and Stable Value Funds

I have a couple of so called stable value funds in my 401k. One is a bond fund which of course, fluctuates a little over the year (it can go up or down). The other is a fund that strives to keep the NAV at $1, so it would appear that your money just sits there and doesn't go up or down.
In the event of a major market crash, how would these stable value funds perform? Would they lose all their value just like the equity funds?
